TOMATO TARTAR
Blanch the tomato and peel.
Cut into quarters and remove the core.
Spread on a silpat or baking paper and sprinkle with salt and sugar.
Dry for 8 hours at 55 degrees in the oven.
Once dry, chop with a fine knife until you have a tartar.
Season with oil and chives and add the crumbled meat of the CHATKA King Crab , also finely chopped, we will make a 50/50 of tomato and king crab.
TOMATO WATER
Crush the tomato and pack in vacuum bags until frozen, defrost with a cotton cloth to filter the liquid.
Once we have obtained the clear tomato water, we add salt and sugar, texturise with xanthan 2gr per litre and reserve.
CARROT SPHERE
Take 1kg of carrots, peel and cook.
Strain the carrots and grind only the vegetables with 100gr of butter, 15gr of salt, 100gr of rice vinegar, 10gr of gluco, 10gr of procream, let it rest and put it in a bottle.
Add 1l of water and 12g of alginate, mix with a blender and leave to stand for an hour.
Make spheres with the cream and alginate.
PICKLED TURNIP
Slice the turnips and cut with a pastry cutter into petals.
Mix the pickling ingredients together, heat to dissolve the sugar, cool and use to pickle the petals.
PLATTERING:
In the centre of the plate put the tartar, around it the tomato water, and on top of the tartar the petals forming a flower, right in the centre the sphere.
